Forbes – World’s Best: Saffire Freycinet, A Luxury Lodge in the Wilds of Tasmania

The Palate restaurant offers that ever-changing jaw-dropping view, helmed by Paddy Prenter, the Tasmanian-born Executive Chef. The restaurant starts with a sizeable advantage since the east Coast of Tasmania is rich in aquaculture and agriculture, with a bounty of oysters, mussels, crayfish, scallops, spiny lobster, and deep-sea fish. Then there’s grass-fed beef and lamb and the produce bounty from local farms. Chef Prenter creates inventive tasting menus and careful preparations that reveal the best of every ingredient, from Cape Grim eye fillet to Moreton Bay Bug, a delicious creature that’s somewhere between a crayfish and a prawn. A meal here is also a crash course in excellent Tasmanian wines, from pinot noirs from producers like Dalrymple and Tamar Ridge to sparkling wines by Arras and Clover Hill.

No matter where you are in Saffire Freycinet, there’s a view of the undulating pink granite peaks of The Hazards. You can see Tasmania's iconic mountain range from the stingray-shaped main building and all 20 private suites, where spacious interiors wrought from Tasmanian timber and stone nod to the surrounding landscape. It’s also the backdrop when dining at Palate restaurant, where the local produce is as impressive as the view. It's little wonder the high-end retreat is often named Tasmania’s most outstanding stay. While its ultra-modern design creates a unique sanctuary, it’s the complimentary activities, from beekeeping and guided kayaking to an encounter with Tasmanian devils, as well as its famed oyster experience (where guests don waders and feast on molluscs at a table in the middle of the bay) that takes it to the next level.

Elite Traveler – Top 100 Suites in the World 2023

Situated on the eastern coast of Tasmania, with a cinematic view over Great Oyster Bay, Saffire Freycinet boasts what is easily one of the most spectacular locations in the world. It is thanks to this location that the resort’s culinary offering is so special, with the surrounding land regarded for its bountiful produce and the nearby ocean rich with prime seafood, not to mention the region’s excellent winemaking reputation. Saffire’s flagship restaurant, Palate, celebrates the local bounty with an extravagant degustation menu, uniquely tailored to each guest. The venue’s caliber makes getting a reservation hard, but with a stay in one of the lavish one-bedroom Private Pavilions, it comes standard. Boasting a separate lounge, dining area and kitchen as well as a private outdoor deck, the Pavilions are a serene sanctuary — and the views are pretty mesmerizing too.
