The Freycinet Peninsula is an area rich in diversity, and largely untouched. Within Saffire's apiary, Rob’s bees forage freely on native manuka, flowering kunzea ambigua, and prickly box shrubs, producing raw, wild honey with unique flavour profiles – influenced purely by this landscape.
Nature at Its Sweetest
As the seasons shift, so too does the honey, each harvest reflecting what is flowering across the Freycinet landscape at that moment. Shaped by coastal air, native botanicals and an environment distinct from mainland Australia, the result is a flavour profile that feels both layered and expressive, and markedly different from honeys found internationally.
