A weekend highlight is the interactive masterclass with House of Arras, where you will discover the magical art of sparkling winemaking with Australia’s most-awarded sparkling maker, Ed Carr.

It all leads to the pinnacle with a very special Billecart-Salmon Nicolas François vertical tasting masterclass. This is rare chance to join Tyson and explore the past and present of the finest prestige cuvée of Billecart-Salmon; featuring vintages 2008, 2007, 2006, 2002, 1998 and 1996 poured from magnums.

About Tyson Stelzer:

Tyson Stelzer is a multi-award winning wine writer, television host and producer, author of 18 wine books, international keynote speaker and wine show chairman and judge.

He was named The International Wine & Spirit Communicator of the Year 2015 (in the International Wine & Spirit Competition), the Australian Wine Communicator of the Year 2015 and 2013 (The Wine Communicators of Australia) and The International Champagne Writer of the Year 2011 (in The Louis Roederer International Wine Writers’ Awards). ITINERARY

FRIDAY, 16 AUGUST

12 noon – 2:30pm
Guests are welcome to arrive at their leisure for sit-down lunch in Palate restaurant before being escorted to your suite.

2pm – 7pm
Spend the afternoon enjoying your suite or partake in a range of signature activities including the Connection to Country Experience, Beekeeping Experience, Guided Wineglass Bay Lookout Walk, Oyster Marine Farm Experience and Tasmanian Devil Encounter. And for those who prefer, there is always the Saffire Spa to relax and unwind.

7pm – late
Executive Chef Paddy Prenter presents a very special cocktail-style menu exclusively for this dinner. Kicking off with a glass of Billecart-Salmon, the evening will be hosted by Tyson and the local winemakers as they share some of their special sparkling, white and red wines with you throughout the evening. Featuring an exceptional line up from Apogee, Bellebonne, Clover Hill, House of Arras, Kreglinger, Lowestoft and Wellington & Wolfe.

SATURDAY, 17 AUGUST

7am – 10am
A la carte breakfast at guests’ leisure.

9am – 12pm
Start the morning in style by joining our interactive House of Arras sparkling masterclass, where you will discover the magical art of sparkling winemaking with Tyson Stelzer alongside Australia’s most awarded sparkling maker, House of Arras winemaker, Ed Carr.

Alternatively, spend the morning enjoying your suite or partake in a range of complimentary signature activities including the Guided Wineglass Bay Lookout Walk and Oyster Marine Farm Experience, or a cruise on the Saffire vessel at an additional cost.

12noon – 2pm
Lunch is served on the terrace (weather dependent) with a Saffire-style BBQ, joined by local featured sparkling, white and red wines.

2pm – 4pm
The pinnacle of the weekend is here with a Billecart-Salmon Nicolas François vertical tasting masterclass. This is a very special chance to join an interactive session hosted by International Wine Communicator of the Year, Tyson Stelzer, exploring the past and present of the finest prestige cuvée of Billecart-Salmon; featuring vintages 2008, 2007, 2006, 2002, 1998 and 1996 poured from magnums.

6:30pm – late
The day leads up to the ultimate degustation dinner and immersion in the great wines of Tasmania and champagne. Pre-dinner drinks will be hosted by Tyson and the winemakers, before moving into a gala formal dinner hosted in Palate Restaurant. A tasting course menu has been designed exclusively for this evening by executive chef Paddy Prenter showcasing premium, seasonal produce from around the state.
